State-of-the-art boning and value-add rooms

Oakdale Meat Co. operates one of the most modern boning and value-add facilities in Australia. Based at Dandenong, Victoria, this complex underwent a multi-million upgrade in 2019 and incorporates the latest grading and quality assurance technology. Every aspect has been purpose-engineered to optimise processing efficiency, food safety, ergonomics and cold chain management. We aim to exceed industry standards at every step.

Quality that you can see and taste

Oakdale Meat Co. utilises its extensive experience, processes and the latest technology to ensure consistent quality and presentation in every primal and portion. Carcases are assessed for marbling, meat colour and fat colour by accredited AUS-MEAT graders before they leave the abattoir and then sorted before boning to produce runs of identical quality. Each hind and fore quarter is boned and trimmed on the table to exact customer specifications by the same boner to ensure consistency within each pack and carton. Carcases and primals remain identified throughout the boning process. Bone-in primals, boneless primals and portions are then graded a third time on the table to meet exact customer specifications before packaging and labelling. Oakdale Meat Co. is developing its own Certified Tenderness verification program to ensure our beef doesn’t just look good, but consistently tastes great!

Exact trim management

Oakdale Meat Co. utilises a state-of-the-art Marel trim management system that incorporates in-line chemical lean analysis and foreign objective detection. This system is calibrated daily in-house, monthly by the manufacturer and independently audited by National Association of Testing Authorities (NATA). Our European PSS frozen block grinder is capable of processing up to 15 tonnes of premium mince every hour to your exact blend quality (3, 5, 8 or 10 mm), lean content and value. We also have smaller Thompson and Treif mincers capable of processing five and two tonnes per hour, respectively. As an added quality assurance measure, a Foss Food Scanner is used to sample portions leaving the value-add room.

World-class quality and safety

Oakdale Meat Co. holds Safe Quality Food (SQF) accreditation, an comprehensive and internationally-recognised HACCP-based food safety and quality management system. Cold chain management is pivotal. We aim to have packaged meat into cold storage within 20 minutes of arrival. In addition, our processing facilities are accredited by the Halal Certification Authority. Our experienced team is comprehensively trained in all aspects of food quality and safety to ensure we comply with regular auditing by industry and government organisations, and customer specifications.

Highly-experienced staff

Oakdale Meat Co. employs more than 100 highly-experienced AUS-MEAT accredited graders, boners, slicers, knife hands, bandsaw operators, quality assurance supervisors, floor hands, delivery drivers and administration staff. As a family-owned business, we know that our greatest asset is our people. Our staff retention rate is well above the industry norm and some members of our team have been with us for more than 20 years. Their skill, experience and engagement is pivotal to ensuring the quality and consistency of our products.

Integrated supply chain – Livestock

Oakdale Meat Co. is unique from other beef boning rooms in that we source our own cattle from breeders throughout Victoria and New South Wales. Our dedicated breeder network and highly-experienced cattle buyers provide a consistent supply of quality cattle throughout the year. Oakdale Meat Co. also operates its own feedlot in central Victoria, in addition to custom-feeding at two feedlots in southern NSW.
